Either one will work. Mac server is a lot easier to set up (I guess that
really depends on your expertise but Macs tend to be easier to set up and
mantain) than NT IIS. The email really depends on the software you want
to use and wether you want to do IMAP or just POP. But there are
solutions for both.

I would go with the Mac simply because it' easier.
